Pumpkin Apple Granola

It’s finally fall!!!!!

In Pennsylvania we have been welcoming the fall season with a lot of rain…

The cozy vibes have me all excited and while I was decorating my house for fall I had to whip up a batch of fall granola. It was more for the smells. 😉 

I love this served over coconut yogurt, mixed in a trail mix, or a handful on its own…

Ingredients: 

3 cups of gluten free oats 

1 cup walnuts 

1/3 cup of raw pumpkin seeds

1/2 cup pumpkin puree

1 tsp of Himalayan sea salt

1 tsp of cinnamon 

1/3 cup of melted ghee or organic butter

1 tsp vanilla extract

1/2 cup maple syrup 

1/4 cup chopped dried apples (optional)

Mix all ingredients in a large mixing bowl. Pour over a baking sheet lined with parchment paper. Bake at 350 degrees for 20 minutes.
