Sweet Potato Fries

Sweet potatoes are one of those foods people seem to only enjoy during the holiday season. But did you know they’re actually a superfood? This recipe will have you making sweet potatoes all year round. Sweet potato fries are a great side dish to any meal and a filling snack that you can feel good about.

First lets look at the benefits of sweet potatoes. They’re full of antioxidants found in the carotenoids that give them their orange color. Antioxidants can help lower your risk of cancer. They supply more than enough vitamin A in just one serving. They’re rich in vitamin B6, vitamin C, potassium, and fiber. They can even help lower your LDL cholesterol. This makes them an extremely heart healthy food. They’re also on the anti-inflammatory foods list, are low FODMAP, and a low histamine food.

Now on to the recipe:

Since sweet potatoes vary in size and shape so much, this recipe will not give exact measurements, but don’t worry, it makes it super easy for you. There’s no measuring required!

  1. Preheat the oven to 425 degrees Fahrenheit. If you have the convection setting on your oven, use it.
  2. Cut the sweet potatoes into fries. Make sure you have a good knife; this is the hardest part of the whole recipe!
  3. Put fries in a bowl, sprinkle with olive oil, and mix. The fries should be evenly coated with a thin layer of olive oil. If you have a bunch of oil in the bottom of the bowl, you used too much. You can fix this by removing them from the bowl and gently dabbing them with a paper towel.
  4. Lay them on a baking sheet making sure they’re in a single, even layer. Not on top of one another.
  5. Bake for 17 to 20 minutes. The larger you cut your fries, the longer they’ll need to cook. Bake until they have slightly browned and are tender.  
  6. Sprinkle with salt or other seasoning of your choice and enjoy!
